- Formamos las albóndigas, pasamos por harina y freímos en el mismo aceite donde habíamos hecho las patatas reservamos las albóndigas
- Ponemos en una sartén con un poco de aceite la cebolla picada y los ajos una vez que esté pochado añadimos la pulpa de la berenjena que habíamos cocinado al horno,le añadimos el vino blanco y dejamos que evapore el alcohol, añadimos el agua y la pastilla de caldo vegetal y la cúrcuma,cocinamos unos minutos y salpimentamos,
- Trituramos la salsa volvemos a poner en la cazuela y añadimos las albóndigas cocinamos por 10 minutos, retiramos del fuego y le añadimos perejil fresco picado y ya lo tendremos listo para servir
