- Lava, pela y ralla el plátano verde, los guineos y la yautía. Pon la sal y el aceite de achiote a la masa y revuelve con la mano hasta que esté de un solo color.
- En una cacerola ponemos el aceite y ponemos cebolla hasta que ésta esté transparente ponemos los ajos picados, el pimiento, los tomates y el vinagre. Agrega la carne molida y revuelve con un cucharón de madera hasta que la carne tome un tono café claro.pon la la pasta de tomate y las aceitunas. Tapa la sartén por unos 10 minutos y luego drena o escurre el exceso de líquido de la sartén, pon sal y la pimienta molida. Deja reposar y enfriar un poco antes de rellenar tus Alcapurrias.
- En un pedazo de papel de aluminio o papel de cera coloca un poco de aceite, luego una cucharada de la masa (usa una cuchara de servir arroz). Coloca en el centro un poco de relleno y moldea hasta cubrir el relleno.
- Pon aceite en una cacerola o sarten un poco alta.
Fríe las alcapurrias en el aceite caliente un par de veces por 3 o 4 minutos y escúrrelas colocándolas sobre papel toalla para que éste absorba el exceso de aceite. - Sírvelas y disfrutalas!! tambien puedes usar pollo para el relleno ;)
