- En una olla ponemos agua a hervir con una cucharada sopera de sal. Añadimos 2 huevos con la cáscara y el arroz. Tras 20 minutus aproximadamente de cocción colamos el arroz y lo retiramos. Pelamos los huevos y los cortamos en cuadraditos y los reservamos.
- En un recipiente vertemos la leche, las 3 cucharadas de pan rallado, sal, pimienta y el huevo (que resta sin cocer) mezclamos todo bien y añadimos la carne molida de res. Añadimos el arroz que hemos reservado (unas 3 cucharadas soperas de arroz hervido) y mezclamos hasta que quede una mezcla homogenera como en la foto 2.
- En la licuadora introducumoa los tomates y la cebolla en cuadraditos, también 2 vasos de agua, 1 ajo, la pastilla de caldo de pollo, y la latita pequeña de chile chipotle (sino lo queremos muy picante echar la mitad o 3/4 de la lata) y licuamos todos los ingredientes bien.
- En una olla ponemos un chorrito de aceite hasta que esté bien caliente, entonces agregamos la mezcla de la licuadora y ponemos a hervir, mientras se calienta preparamos nuestras albóndigas.
- En la mano nos ponemos aproximadamente 1 cucharada sopera de la mezcla de la carne molida y en el centro ponemos un trocito de huevo, lo envolvemos hasta hacer la albóndiga como en la foto. Y vamos repitiendo el proceso hasta acabar la mezcla de la carne molida.
- Cuando ya esté hirviendo la salsa con cuidado vamos metiendo las albóndigas una a una y dejamos hervir hasta que estén bien cocinadas aproximadamente 20 - 25 min dependiendo del tamaño.
- Transcurrido ese tiempo ya están listas para comer!
