- A los chiles les vamos a retirar las semillas para meterlos a hervir durante 10 minutos y posteriormente apagaremos el fuego. Mientras tanto ponemos los tomates y el tomatillo en un sartén a tatemar.
- Ya tatemados los tomates y hervidos los chiles, los vamos a pasar a la licuadora y agregamos de 2 a 3 cucharadas soperas del agua con la que hervimos los chiles, el ajo y el orégano.
- Ya bien licuado vamos a reservar.
- En un sartén a fuego medio agregamos un chorrito de aceite y agregamos una vez caliente la cebolla y dejamos acitronar. Una vez que la cebolla tenga un color ligeramente dorado meter la papa y la mantequilla y mezclar hasta que se derrita la mantequilla.
- Ya derretida la mantequilla, agregar la salsa y la pimienta y mezclar muy bien durante unos 10 minutos.
- Agregamos la carne.
- Ya bien mezclada la carne con el resto vamos a tapar durante 15 minutos. Cada 3 o 4 minutos destapa y mezcla bien.
- Pasando los 15 minutos retiramos la tapa y seguimos cocinando a fuego medio durante 35 a 40 minutos más o hasta que se reduzca el líquido. Hay que asegurarnos que no le falte sal.
- Y listo, ya esta nuestra receta, en mi caso las serví en tostadas con frijoles refritos, aguacate y crema.
